This is our homemade beef Bresaola! This cured meat originated in Valtellina, a valley in the Alps of northern Italy's Lombardy region. Our Bresaola is cured with wine and spices for 7 days. We then hung it to air-dry for weeks. It is typically cut very thin and served as an antipasto with rocket and Parmesan.
